Like all of us, I need different ways to enjoy the foods I love. Do you need some inspiration sometimes? Well I'm here to help!

I had a little play in the kitchen today for a quick snack. My days are usually pretty full on so I need food that I can grab and eat while I'm still busy ticking things of my list (which I now actually have and its amazing to get stuff done!) but that will also keep my tank full for a long time. Wholefoods are great at keeping our tanks full. I quite often take a tub of yoghurt and a container of granola to mix in to work and munch on.

Today, however, I whipped up something that I can throw in my lunchbox that was super easy to make, and SUPER easy to eat! It has gone through the harshest critics of all - my boys - and it was a winner winner chicken dinner! I will work on a school friendly version though, as our school, along with most, is a nut free school. These would be AMAZING to put in their lunchboxes for long lasting energy.

So... are you wondering what they are?! Lets call them Granola Balls of Yumminess.

They only have 3 ingredients - check out the recipe below.

Granola Balls of Yumminess

Ingredients

  • 1.5 cups of your favourite Fodden Granola
  • 4tbs Nut butter of your choice
  • 1tbs of Sweetener (leave out if you like)

Method

  1. Place the Fodden granola in a food processor and blitz to a consistency you would like. I kept mine a little lumpy for texture.
  2. Add the nut butter and sweetener and blitz again until it comes together.
  3. Roll it into balls in the size you would like.
  4. Enjoy!

These will store really well in the fridge in a sealed container for at least a week.
