1 Cup of Frozen Mixed Berries
½ Frozen Banana
3 ½ Tbsp of Almond Milk (or milk of choice) plus more if needed
2 Scoops of Plain or Vanilla Protein Powder of choice (optional)
Sprinkle of Fodden Granola

Instructions

Add the berries, banana, protien powder (if using) and milk of choice into a blender or a jug to use a stick blender.
Blend until smooth - add a little more milk if needed.
Put it into a bowl and top with your favourite fresh fruit and Fodden Granola.

Carrot Cake/Muffins with Fodden Granola

This recipe creates the most soft and moist carrot cakes or muffins with a beautiful hint of spice with the added bonus of granola goodness.

1 cup of Plain Flour
2 tsp of Baking Powder
2 tsp of Ground Cinnamon
2 Eggs
¾ cup of Vegetable Oil (or Olive Oil)
¾ cup of Caster Sugar
1 ½ cups of Grated Carrot
1 cup Fodden Granola of Choice (optional)

Cream Cheese Frosting

75 g of Cream Cheese at room temperature
25 g of Soft Butter
1 ½ cups of Icing Sugar
60 g Fodden Granola of Choice

Instructions

Cake/Muffin Batter

Grease either a 20cm round cake tin and line it with baking paper, or to make muffins, line a muffin tray with patty pans. Pre heat oven to 180 deg Celsius.
Sift flour, baking powder and cinnamon into a bowl.
In a food processor, add the eggs, oil of choice and caster sugar. Process until combined.
Add the flour mix to in the processor in 2 batches until combined. Add the grated carrots and process briefly until combined. Stir in Fodden Granola if you are adding it, do not process with the blade. Pour the mixture into the cake tin or patty pans.
Cook for 45min for the cake, 17min for muffins or until cooked when tested with a toothpick. Stand in the tin for 10 minutes before turning them onto a wire rack to cool completely.

Cream Cheese Icing

To make the frosting, place the cream cheese and butter in the food processor or mixer. Process until light and fluffy. Add the sifted icing sugar mixture, process until smooth.

Spread or pipe the icing over the cooled cake or muffins and sprinkle with a generous amount of Fodden granola just before serving. Share with friends and family!

Notes

This can be made into either 12 muffins or 1 cake.

4 Tbs of Nut Butter of your choice
1 Tbs of Rice Malt Syrup (or sweetener of choice)

Method

Place Fodden Granola in a food processor and process until desired consistency. I kept mine a little lumpy.

Add the nut butter and sweetener and blitz until combined.
Roll into balls the size you would like.
Enjoy as is, or perhaps roll in coconut or chia seeds.
